Our principal goal at Maokong was the Taipei Tea Promotion Center, where the process of making tea was explained. After picking the tea leaves the first step is withering, i.e. drying out. At the same time, an enzyme is causing internal oxidation, which they call fermentation. This is not the meaning of fermentation of beer or sauerkraut. Withering can start on tarpaulins and continue on trays like these.
